I have had a lot of experience with low carb eating. I had gestation diabetes with both Judah and Selah’s pregnancies. This caused me to have to seriously adjust my eating habits. Come to find out,my body pregnant or not just doesn’t like carbs that much although my tongue protests greatly. Here are a round up of some of my favorite low carb family friendly recipes that I use every month. My kids actually eat all of these. True story. My husband and I take the Beauty and the Beast method: “You don’t eat with us, you can go ahead and STARVE!” when it comes to eating.

This one is great to make in bulk. I used it for burrito bowls and then froze the other half for another day. It is simple and tasty.
Avocado did you say? Then I’m 100% in! This is good on pretty much anything. I put it in a squirt bottle and enjoy on eggs, potatoes, chicken, beans ect.
I love how many different vegetables you can put together on one sheet and cook in one batch. The only caveat is that the broccoli can feel a little over done for my liking so I added it half way through the cooking time which turned out great.
This one gets made at least once every two weeks at my house (which is often because I really like variety in my meal planning). It is simple yet satisfying. I love the paprika on the sweet potatoes!
